Grant Gedemer serves at Food and Beverage Director at The Godfrey Hotel Chicago, overseeing the food and beverage teams at the hotel’s two outlets, I|O Godfrey and Dolce Italian, as well as leading event creation, execution, and marketing for the lounge and restaurant.

With more than 16 years working in the hospitality industry, Gedemer possesses a knack for quick problem-solving in all aspects of leading the food and beverage initiatives at a hotel – from budgeting to managing team members to running the floor and fostering a positive customer experience.

Before joining The Godfrey team, Gedemer was the general manager at Old Town Social, where he increased monthly revenue 20% by developing brunch and dinner service, as well as nightlife. Gedemer’s food and beverage leadership at The Godfrey has led to recognition as Lounge of the Year and Event of the Year from Nightclub and Bar for I|O Godfrey, the property’s all-seasons rooftop lounge. Of all of Gedemer’s achievements, he is most proud of training and developing team members who have a strong work ethic and a dedication to helping fellow colleagues.

When not at The Godfrey Hotel Chicago, Gedemer can be found going for long runs around the city, practicing his stand-up comedy, or hanging out at his home in the city with his dog Robin.
