Pro Workshop 3 - Crucial Food Cost Controls for Maximum Profits
Rising food prices are a constant battle for bar and restaurant owners. That’s the bad news. The good news is there are systems you can put into place that not only help you control your food cost but allow you to carve a bigger margin for profits. Systems also allow owners to successfully delegate duties to managers without fear of everything going wrong. If you want to rescue your food cost and control your cash, this workshop is for you! David Scott Peters, founder of TheRestaurantExpert.com and workshop speaker, will teach attendees the key kitchen management systems that control food cost and allow owners to handover responsibilities with confidence everything be done correctly. When you implement and routinely use the systems Peters teaches, your battle with rising food prices will finally be under control. Attend this workshop to learn how to:

  • Determine your target food cost
  • Turn the product on your shelves into cash in the bank
  • Take accurate inventories in less than an hour each week, and why it’s so important
  • Simplify your ordering system while delegating for success
  • Allow managers to order what is needed while staying within budget
  • Recognize and correct problems before the end of a period
  • Give up control of ordering without giving up control of your checkbook
  • Calculate product par levels so easily that almost anyone on the team can order
  • Cost out your recipes so that you make money on every menu item

Making the Bar Fun Again
Join Tony Abou-Ganim, The Modern Mixologist, as he takes you on a journey of his 38 years behind bars. From Fuzzy Navels and Kamikazes to the resurgence of lost and forgotten classics, to craft cocktails, to house made ingredients and huge bitters selections.

Through all of this one key element should and has remained constant and that is the guest experience and the fine art of hospitality. No arrogance or pretentiousness should exist behind the bar. The bar should be the kind of place that lubricates tensions, rather than aggravate them. A smile, warm welcome, handshake and a thank you are all ingredients that make a great bartender, and make the bar a fun and welcoming place.

D-A-T-I-N-G Your Customer® It's About Relationships
We all know that customers today are armed with information about your company, your products and services, the costs, and the competition. They know they can vote with their dollars, and they exercise their right to do just that. Nightclubs and bars are one of the most competitive entertainment choices in today's marketplace. It's not about price...it's about the experience.

Most of us are disillusioned and appalled by the way we are treated as customers. Clearly, we are in a time of deep depression and deterioration when it comes to the way we treat our customers. We go to venues where there is the least hassle, the least ignorance, the least apathy. We have learned to tolerate mediocrity and to gravitate to the least mediocre treatment we can find. And the byproduct of mediocrity is price sensitivity. In this session, attendees will learn how to maintain and even increase your prices by creating 'meaningful memories.'

Your attendees will leave with practical information they can apply immediately. Jim's latest book, D-A-T-I-N-G Your Customer® A Relationship Manual produced plain talk for smart people. He will make it easy to remember how to build Customer Engagements.

It's just like D-A-T-I-N-G. The goal is to bring them back.
• Dazzle
• Anticipate
• Treat
• Innovate
• Nurture
• Gush

If you believe, as he does, that most of the organizations we deal with are besieged by incompetence and a palpable, rampant indifference to the art of creating and keeping a customer, D-A-T-I-N-G Your Customer is what your organization needs to create and maintain great relationships and profit margins.

Serving Beer the Way the Brewer Intended
This session is a crash course on how to prepare your bar to be craft ready, which builds to learning how to curate the tap handles appropriately based on brewery, style, price points, seasons, and events to maximize the full potential of your bar.

The rapidly changing craft beer market is one that can leave your bar behind faster than you may realize it. This includes a staff training guideline, beer knowledge basics, pouring techniques to monetize every pour, ways to enhance the bar environment and atmosphere, how to increase direct brewery involvement at your location, increased community involvement, and how to properly price the beer.

How New .05 Laws will Hurt Your Business
A new threat has emerged for the restaurant and hospitality industries. After the National Transportation Safety Board began pitching the idea in 2013, Utah became the first state to lower the blood-alcohol arrest level for driving from .08 to .05 last year. These .05 laws would define many of your, what would previously be considered responsible, patrons as legally drunk and subject them to all the punishments and penalties associated with a DUI conviction. Understandably, the risk of being convicted over consuming relatively little alcohol would prompt potential customers to refrain from purchases or stay home altogether.

Utah is only the first domino to fall — other state legislatures will surely attempt to pass similar .05 statutes. We need to go on the offensive against .05 now in order to save your business and the industry from irreparable harm.

Six Ways to Create Engaged Employees to Develop Strong Brand Ambassadors for Greater Awareness for Your Nightclub or Bar
To build a strong awareness of a nightclub or bar, you need brand ambassadors – employees who are thoroughly engaged, connected and committed. By turning employees into trusted brand ambassadors, nightclubs and bars can bring their strongest asset and their most vocal internal advocates in direct contact with their customer base.

This session will demonstrate how to encourage employees to feel connected to the nightclub or bar and understand their role in turning those aspirations into reality.

It is very visible when the nightclub or bar has passionate employees who love who they work for. Having an adoring employee base isn’t just great for word-of-mouth marketing, but for the bottom line as well. This is the pinnacle of employee engagement, but it can only be attained through the individual acquisition of vital knowledge and skills, the reduction of systemic barriers, and the establishment of certain key drivers within the organization. You'll leave with some of the key questions and easy to use tools to address these learning skills.

To encourage your employees-turned-brand-ambassadors to help in this process you will leave with some of the benefits of employees’ social engagement and advocacy that include:
  • Increasing awareness of the nightclub or bar.
  • Improving brand position of the nightclub or bar in search engine results.
  • Making it easier for customers to find events, hours of operation and other answers to their questions online.
  • Improving the nightclub or bar's ability to hire the best job candidates.
  • Employees who are recognized as social media or networking thought leaders can decrease the costs of engaging external audiences, as well as creating digital content.
